Our client a quintessentially historic English pub in Dorking – recently under new ownership, are currently looking to recruit an experienced and proven Sous Chef to join an exciting and growing company looking to expand their portfolio in 2021.
Currently, a small group with their mission to cook with pride and serve with passion. The Head chef coming from a 3 star Michelin Background and looking to strive for 2aa rosette level status following the pub coming under new ownership last year.
Our client make all menus, stocks sauces, served fresh on site and are looking to utilise local farms and suppliers in the area, in addition to growing their own vegetables to use within their regularly changing seasonal menus.
As Sous chef our client will be looking for you to have strong leadership ability, and a skilled background (ideally working to rosette level previously). You will be the hands on manager of the brigade of 5 in the absence of the head chef. The pub offering 46 covers inside with a further 90 in a large covered outside space. On average on a busy weekend cooking for up to 100-150 covers per service and is in a great accessible location in Dorking.
For the client, he is looking for a Sous Chef with the right ambition, passion and energy to achieve whilst cooking fantastic food, and with the enthusiasm and pride to cook things right.
You will be working a mixture of 3 straights/ 2 split shifts on average on a 5/7 day basis.
