The Story of Appetite

And what a story! Appetite has survived the bank recession of 2009 before growing and thriving over the subsequent years.

The same is happening through the 2020 pandemic.  However, through system rebuilds, the new website and team enhancement and retraining we are here to stay with an ambition to grow.

How have we done this and how will we achieve our ambition we hear you ask?! Reputation, hard work and service to the amazing people we work with.  Our people.  Our clients, candidates, and colleagues (the 3 Cs!) are the start, middle and end of our world and we simply continue to put people first.

Hospitality ambassador Nick is a driven and fun-loving individual with a passion for people and everything hospitality recruitment.  A rugby enthusiast with an entrepreneurial spirit Nick set up Appetite4Recruitment in 2003 having worked in hotels, pubs, bars, and restaurants from an early age. Oh, and he also owned a great pub!

With business partners in Mike Gardner (Appetite4Work) and Dawn Redman (Hospitality Jobs UK), Nick considers himself lucky to work with a couple of the industry’s best and that’s without mentioning the collective team throughout the business family.

As an active supporter of ‘Only A Pavement Away’ Nick runs events to date and you’ll often find him covered head to toe in mud at Tough Mudder with colleagues and friends of the industry.

Watch this space. It’s just the beginning! We’re riding out and improving through the pandemic as we did in the 2008 Bank Recession. Hoping to create more opportunities for amazing people who need that break in tough times.

Zimbabwean born and bred, I moved over to the UK at the age of 18 ready to conquer the world!  My first job was as a waitress in Zimbabwe in a bar/restaurant and I was hooked – a whirlwind career including JD Wetherspoon, and Nando’s before landing in hospitality recruitment, initially with Berkeley Scott before meeting Nick in 2012 and the rest is history!

I passionately love what I do and genuinely enjoy the daily interactions I get to have. I wholeheartedly believe in the connection of people.  I have been privileged to have recruited some awesome positions over the years and the buzz never dies.  I find connecting great people to great businesses one of the most satisfying and rewarding feelings.  I love a challenge; I am greatly motivated by the success of those I interact with.  I enjoy taking the time to really get to know people and understanding what makes them tick.

No two days are the same and the relationships I have forged over the years have become life-long connections and in many cases, friends.

I started my career in hospitality as KP in my local restaurant whilst attending college – fast forward six years and I was now the kitchen manager for that restaurant! Fast forward another four years I walked into Appetite looking for a change in my kitchen career – and six years later I’m now one of the Managing Consultants for the team here!

I really have fallen in love with keeping connected to the kitchen and the industry whilst finding great jobs for great talent. Having the opportunity to speak with so many different types of businesses and the amazing operators behind them makes my job fun and engaging, every day of the week – which is why I love what I do!

I still cook a lot in my spare time so I don’t lose my skills, and it’s a passion of course. When I’m not cooking or recruiting  – I’m normally doing something football related as an avid Newcastle fan (I love the punishment, obviously)

“A Yorkshire lad, I moved to the south in 2011, tempted by the energy and diverse restaurant scene of London which continues to inspire and excite me.  Like the rest of the Appetite team, hospitality has been in my blood; my career starting as a pot wash at the age of 14 and have worked in some incredible and diverse businesses since then.

I have developed within Appetite since joining the team in 2016 and am now Managing Consultant for chefs, working predominately in the premium restaurant and pub sectors.

I am immensely proud of the way we operate at Appetite and have the pleasure of working with and supporting some really exciting clients.  People are the backbone of our industry and connecting the right person to the right business is an amazing privilege.  I love building really strong relationships and believe that this is the key to success in the long term.  I really value staying really close to everyone I represent through the initial interview process and beyond and believe this philosophy to be the reason why so many of the chefs I’ve represented remain and develop in their role for years after the initial introduction.

When I am not at work I love to explore with food and cuisines, I love to fish by the sea and forage.  The outdoors is my happy place and a long hike followed by a great pub lunch would mean a great day!”

“Like all of the Appetite team, my career (and passion) started by working in the industry.  I worked in various concepts before joining Mitchells and Butlers and progressing through to a General Manager.

I loved it; there was something addictive and exhilarating about the fast pace and camaraderie of the team.  A very small break and foray into recruitment gave me the taste for something new and exciting and so when I walked through the Appetite doors in 2009, I knew that this was exactly what I wanted to do!

I thoroughly love what I do. I work hard and I work fast to find great people for my awesome clients.  The relationships I have formed over the years are amazing and one of my favourite parts of the job is seeing a candidate become a client and succeed in their career.

I have a huge appreciation for the lively and inspiring clients, candidates, and colleagues I get to work with daily. As an industry, and as a sector we are resilient and strong, and that’s exactly what Team Appetite is all about.”

Chef turned recruiter from Budapest, Hungary.

It is all started with making pancakes with my dad when I was about 13 and from there it was clear that the next step was culinary school, then a chef degree and so on.

As a chef, I had the pleasure of working for some great names such as Hilton, Elite Hotels, ETM and Corrigan’s Mayfair and was lucky enough to be a part of the new opening of The Cheese Bar in Camden by Mathew Carver as a Head Chef.

For me, food is not just a necessity, but a huge passion and this job allows me to discover more and more of this great industry.

As a recruiter my aim is to help chefs to achieve their goals and for employers to find the best fit for their team and drive both sides to success. In order to do so I have plenty years of kitchen experience therefore I’m familiar with most situations both employee and employer need to deal with in this sometimes-crazy industry.

I remember my entry into recruitment like it was yesterday, offering to work pro- bono to gain experience in sales and the local area following a move to Guildford in 2007, after 4 years working on P&O Cruise lines.

I set up the first permanent catering desk for Blue Arrow in Guildford covering the Surrey, Sussex and Berkshire regions and can honestly say I’ve never looked back since!

A graduate in Travel and Tourism management from Cardiff University, the hospitality industry has always been my first passion. Having completed the Graduate Management programme with Marriott and working within the Hotel departments on Board the cruise ships, I have always appreciated and admired fantastic service and am a self -confessed ‘foodie’ – loving to experience new food concepts and trends.

Combining my personal passion of hospitality with the opportunity to spend my working day visiting fabulous restaurants and having the constant buzz of getting great candidates new opportunities in the industry, has honestly never got dull and I count myself incredibly lucky to still be able to learn more and more about our ever-evolving industry.

A job I absolutely love and am excited to get out of bed for every day!!

The resident Aussie!  I started working as a barista in cafes around Melbourne in 2007 and eventually took my craft overseas, working various roles including Head of Coffee for an Australian café group in London and Consultant for a new opening in Berlin. Back in London full time I wanted to move to a sales role and found the perfect place in Appetite where I didn’t have to leave the hospitality industry behind.

I love exploring new concepts in food and drink and of course great coffee will always hold a special place in my heart, so being able to discover fantastic new companies and talented people every day is a dream job. Meeting people, learning their story and helping them get to where they want to be is incredibly rewarding. I work hard and leave no stone unturned in making sure the right people and jobs find each other for long term success. Appetite is a team environment, and we work together to make sure everyone gets the best possible outcome.

Chiara Harker

Finance Manager

chiara@appetite4recruitment.co.uk

Italian born and bred. I left Rome to attend university here in England to study Economics & Business Finance.  Having achieved the dream working in the crazy world of banking, I continued my journey working for various multinationals in credit risk management. I followed my English husband and his job around the world. Along the way, we acquired two wonderful children and made loads of memories. After over a decade of volunteer roles in a variety of sectors, I re-entered the world of hospitality (after a stint as barwoman and waitress in an Italian pizzeria during my studies) and I worked as barista in a small village café. By total chance, in the spring of 2018, I saw an ad on our local Facebook pages for a finance manager for a hospitality recruitment consultancy and, as they say, the rest is history! My hospitality journey continues here at Appetite.

I consider myself extremely organised, efficient and with a good eye for detail. Hopefully my Italian flair does not linger too far from the surface and I hope I bring a bit of light-heartedness in the everyday job! My main responsibilities as a finance manager revolve around invoicing, credit control, payroll and VAT filing. I also look after our Godalming office and make sure we never run out of coffee!

Could this be you?
